Soft Scrambled Eggs Ingredients (2 servings)

  • 6 eggs ( I prefer organic free range eggs)

  • 1 Tablespoon unsalted butter

  • Kosher Salt and fresh ground black pepper, to taste

  • 1 tsp half and half

  • thyme to garnish

INSTRUCTIONS

  • Crack 6 eggs into a medium mixing bowl, add half and half, salt and pepper and whisk

  • place a medium skillet over low heat. add the butter.

  • once the butter has melted, pour the egg mixture into the skillet.

  • stir the egg mixture continuously with a rubber spatula

  • Off the heat, season the eggs lightly with salt & pepper. Stir in 1 tsp of crème fraîche

  • Plate and garnish with chopped chives.
