BBQ Breakfast Potatoes

This weekend we hosted brunch at our place and it gave me the opportunity to make one of my favorite dishes, BBQ Breakfast Potatoes. Mornings are made brighter with the tantalizing aroma of sizzling potatoes infused with smoky barbecue flavors. Today, I'm thrilled to share with you a recipe that marries the comforting essence of brunch with the bold allure of barbecue seasoning: BBQ Seasoned Breakfast Potatoes.

BBQ Brunch Potatoes Ingredients

  • 5 medium russet potatoes, washed, peeled, cut evenly into 1 inch cubes

  • Submerge potato cubes in water in a medium pot, add the following ingredients

    • 1 Tablespoon white vinegar

    • 1 Bay leaf

    • 1 clove of garlic

    • 2 teaspoons of salt

  • 3 Tablespoons Olive Oil

  • 2 Tablespoons Central BBQ Rib Rub (or similar BBQ seasoning)

  • 1 teaspoon granulated garlic

  • salt to taste

BBQ Brunch Potatoes Instructions

  • Preheat oven to 425 degrees Fahrenheit

  • line a large sheet tray with aluminium foil and rub with olive oil

  • boil potatoes until tender and drain

  • set aside until completely cooled and dry

  • place potato cubes into a large mixing bowl and toss with olive oil, BBQ rub, granulated garlic, and additional salt if needed, until evenly coated

  • spread potatoes onto prepared tray and place in preheated oven

  • cook 45-60 minutes until golden brown
