EATS: Perfect Breakfast Toast

I consider myself incredibly lucky to have a friend who keeps chickens, and generously gave me a dozen beautiful eggs (you can see on here on my Instagram) so I decided to take some time this morning and make the perfect breakfast toast. The taste of fresh eggs is incomparable, and combined with a crusty bread, creamy ricotta, fresh green onion, and salty smoked salmon it’s the perfect breakfast toast.

Perfect Breakfast Toast Instructions

To begin, slice a thick piece of sourdough bread (although, any hearty, crusty bread of your preference will do). Heat a non-stick pan on medium high heat and add high quality olive oil to the pan. Place your toast in the pan, rubbing it evenly in the oil and toast on both sides. Once the olive oil is evenly distributed, salt and pepper each side of the toast. Once both sides have a light brown toast to them, remove from the pan.

Smash one clove of garlic and rub the toast on both sides. Next, lightly spread ricotta cheese over one side of your toast. Add your smoked salmon. In the same non-stick pan, fry one egg using olive oil. Remember to season with salt and pepper. Once your egg is cooked to your preference, place on top of the smoked salmon and top off with fresh green onions.

To enjoy this breakfast toast you’ll need a fork and a knife. Dig in and enjoy!
