Q & A with Me

Today let’s change up the post a little bit and get to know each other better. My wife is throwing me some questions about chef life, and food, that I’ll answer. I would love to know more about you too so jump into the comments section and answer one or any of the questions that we are throwing up here today on the blog. I’m enjoying anything right now that keeps people engaged and connected. Let’s go!

Q. What is your favorite snack?

A. My favorite snack is popcorn. I eat pretty healthy and I’m really good at staying away from candy, cookies, pastry. Don’t get me wrong. I enjoy those things but reserve them for special occassions and trips. I do love popcorn though. Especially movie theater popcorn, or fresh from the stove popcorn for movie night at home—as the current situation mandates. I also like trail mix of dried fruits and nuts and I almost always have it in the car for longer drives/road trips.

Q. During quarantine, where or what food do you most miss for eating out?

A. Pizza. No question. If you follow me on social media you know just how much I love pizza. Especially New York pizza. Hey, even in Paris for the night of our vows celebration my wife choose a Parisian hot spot for Neapolitan pizza (Pizza Popolare) for dinner. She knew how to get the party started because that’s how much I love pizza. This question is making me miss it even more. When we’re free and clear of this, Di Fara in Brooklyn, I’m coming to you.

Q. Where do you want to travel to first when it’s safe again?

A. First order of business is to get my sons to NYC—we’re missing spring break because of the pandemic and it’s really hard and the worst part of quarantine for me. So the minute it’s safe, for them to come to NYC or for me to go to Seattle to see them. Second, Thailand and Costa Rica are definitely on the wish list. We’ll see which is first.

Q. What is your least favorite thing to cook?

A. Well, I love to cook with clams but cleaning them is a huge pain. You have to make sure they’re clean of any sand. Even the smallest grain of sand can feel huge if it makes it into your bite.

Q. What is your favorite thing to cook?

A. Anything new. I like the challenge. I like to understand the chemistry of the recipe and after I master a new technique or dish I like to get creative and put my own signature to a dish.

Q. Aside from cooking, how are you keeping entertained during quarantine?

A. Quarantine has not been slow for me. I’ve actually been really busy. The care of my daughter has a lot of demands right now. I am still working (in a very safe and isolated work and living environment). And bringing you a post a day. When we have free time I really enjoy walks on the beach with my wife—we practice social distance from others—daily FaceTiming with my kids and other friends and family. I meditate every single day and that’s really helped keep me focused and calm. It helps that my wife and I are together. We keep each other entertained sharing news stories every morning over coffee, making new and different shakes and foods, and occasionally creating a new cocktail. We do face masks and peels together which can actually be fun when you’re trying new things. I read every night. When I have time we might watch a movie, right now we’re watching Westworld every Sunday. At home exercise (I use resistance bands and do push ups). Of course my Fender made it with me to isolation in Southampton so at night I play on that and try new tunes.

A. It’s hard to choose just one, but let’s go with: What is your favorite food memory?
