Park City Guide: LOMA

While we were in Park City we met with an industry friend of mine who has relocated to Park City to open a new restaurant. We asked for suggestions where to go to for dinner and he directed us to LOMA. LOMA, is a modern Italian restaurant. LOMA emphasizes sustainability by partnering with local purveyors and maintaining eco-conscious business practices.

To start we enjoyed the house-baked focaccia. The focaccia had a nice soft, airy texture, perfect for soaking up the rich olive oil and aged balsamic. Paired with creamy whipped ricotta, each bite delivered a blend of flavors that makes it a satisfying and hearty starter.

We shared two mains. Loma had been recommended to us for their wood fired pizza so we had the marinated tomato pizza. This vegan pizza had nice fresh, tangy flavors from the sundried tomatoes and marinara, complemented by the creamy ricotta and house-made mozzarella. Finished with fragrant basil and a drizzle of aged balsamic, every bite offers a perfect balance of savory and sweet. The crust was a nice and airy, a little thicker than I usually prefer, but tasty. Wanting to try the house made pastas, we also ordered the squid ink fettuccine. Featuring grilled Mexican shrimp and tender calamari this dish had a delightful seafood richness. The spicy Calabrian chili cream sauce, paired with fresh cherry tomatoes, spinach, and a crunchy touch of anchovy bread crumbs, created a nice blend of textures and heat. The major downfall of this dish was the fettuccini. It tasted under cooked and tough which was a let down.
