Vail Guide: Stoke & Rye
Everyone enjoys a good Après-ski and no different, we decided to have drinks and dinner at Stoke & Rye modern American grill. Located inside Vail Valley’s Westin Riverfront, Stoke & Rye is packed with ski revelers ready to enjoy smoked cocktails, grilled steak and seafood towers. The dinning room is large, bright and airy, with stunning views of Beaver Creek Mountain and the Eagle River. It’s a wonderful setting.
We started with the artichoke dip. It’s served as a cold dish with toasted almond, grilled garlic confit bread, truffle peelings, humboldt fog cheese. By the description I think you’ll know, we all really enjoyed this starter and paired it with an order of truffle fries (a Lynette and Jack favorite). My après-ski beverage of choice was the Smoked Peach Ring—diplomatico reserva exclusiva, giffard peche de vigne, demorange, hellfire bitters. They smoked the glass table side which was a fun experience and the cocktail was tasty.
For mains my wife and I shared the roasted heirloom beet salad—arugula, candied nut brittle, balsamic reduction, blood orange vinaigrette, and the local farm trout— roasted zucchini, shaved fennel, avocado espuma, lemon. Both dishes were well executed and tasty with an elegant presentation. Jack ordered the Rib Eye-Bison Burger— bibb lettuce, tomato, onion, bacon, s&r tartar, smoked cheddar, fries and it was also nicely done (though we realized at one point we had more fries than we could finish!).
Prior to dinner we were served warm cookies while skiing and Lynette had brought us caramel apples from Rocky Mountain Chocolate Factory so we were too full for dessert. The options did look tasty, give them a try and let me know what you think!
