Creamy Lemon Pasta Ingredients

  • 12 ounces spaghetti or linguine

  • 1/4 cup olive oil

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • Zest and juice of 2 large lemons

  • 1/2 cup grated Parmesan cheese

  • Salt and freshly ground black pepper, to taste

  • 1/4 cup chopped fresh parsley

  • Extra lemon zest and Parmesan cheese for garnish

Creamy Lemon Pasta Instructions

  • Cook the Pasta: bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

  • Prepare the lemon sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté until fragrant, about 1 minute.

  • Add the heavy cream, lemon zest, and lemon juice to the skillet. Stir to combine and let it simmer for 2-3 minutes to thicken slightly.

  • Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add a little of the reserved pasta water until you reach the desired consistency.

  • Stir in the grated Parmesan cheese until melted and well combined. Season with salt and freshly ground black pepper to taste.

  • Serve:

    • Transfer the pasta to serving plates. Garnish with chopped fresh parsley, extra lemon zest, and additional Parmesan cheese if desired.

    • Serve immediately and enjoy!

This lemon pasta pairs well with a simple green salad or grilled salmon or chicken for a more substantial meal.
