EATS: Chocolate Chip Peanut Buttter Streusel Cake

Before we get to this recipe, I wanted to tell you that I’m really encouraged by seeing everyone come together, doing their best to stay in and keeping safe from COVID-19. It’s difficult to face the closures of restaurants, schools, retail businesses, and concerts. While it’s well-worth it to do everything in our power to tamp down the spread of COVID-19 I’m really concerned for my friends and family who are facing great economic devastation during this time. I think about this a lot because working in the food and hospitality industry, a lot of people are dependent on hourly wages and or tips. These next few weeks are going to hurt. Fortunately there are some things we can do to help out. Here are three things on the top of my list:

  1. Order take out or buy gift cards from your favorite restaurants and or small businesses. This will offer some relief and help keep businesses afloat during this difficult time. Feel free to share here in the comments businesses in your community worth supporting.

  2. Many people who earn hourly wages have a small business on the side. Support those businesses with purchases and sharing links to your social media groups. Again, let our community here know in the comments below where they can support artists and entrepreneurs you may know of who are in this situation.

  3. If you are fortunate enough to not be suffering economically, please donate to your local food bank, or meals on wheels or other food programs that will help the most vulnerable have their basic nutritional needs met through this time.

Okay, so the silver lining to this outbreak has been that I’m genuinely enjoying seeing so many people get in the kitchen and cook. From professional chefs to self-proclaimed “terrible cooks”, people are sharing from pro tips, to learning the basics of cooking, to just linking great recipes. I love seeing creativity and community through food.

This week, I wanted to make something indulgent and sweet and comforting. I returned to a recipe that I learned from my colleague and good friend, Chef Todd Lowey. As the title gives away, this cake involves two almost universal favorites, chocolate chips and peanut butter, making it the ultimate comfort dessert. Chocolate Chip Peanut Butter Streusel Cake Ingredients

Set I Streusel

  • 2 1/4 Cups All Purpose Flour

  • 2 Cups of Brown Sugar

  • 1 Cup Crunchy Peanut Butter

  • 8 Tablespoons of softened Butter

Set II Cake Batter

  • 3 Eggs

  • 1 Cup Milk

  • 1 teaspoon Vanilla

  • 1 teaspoon Baking Powder

  • 1/2 Teasppon of Baking Soda

  • 1/2 teaspoon sea salt

  • 12 ounces Chocolate

Chocolate Chip Peanut Butter Streusel Cake Instructions

  • In a large mixing bowl, combine the first set of ingredients.

  • Beat on low speed until the streusel is crumbly

  • Set aside 1 cup, lightly packed streusel for topping

  • Combine eggs, milk, vanilla, baking powder, baking soda, and salt with the remaining streusel and mix on medium until well blended

  • Stir in half of the chocolate chips

  • Pour Batter into a 13” 9” 2” Buttered Pan

  • Sprinkle remaining chocolate chips and streusel on the top

  • Bake at 350 F for 45 minutes
