EATS: Citrus, Greens, + Burrata Salad

Summer time is really the season of salads and this summer salad recipe for citrus, greens, and burrata will keep your salad menu fresh and exciting. The rich burrata coupled with crunchy roasted carrots, red cabbage, navel oranges, and greens makes this salad recipe filling and satisfying enough to serve as a lunch meal.

A few tips for executing this salad recipe well. First, roast your carrots enough to really let the flavors of the oil and salt and pepper absorb into the carrot but remove the carrots from the oven while they are still crunchy. Crunchy roasted carrots, and the fresh red cabbage and cucumbers give this salad recipe layers of texture and flavor. Next, taste your burrata. Sometimes the burrata cheese will have a nice salty flavor, other times the salt is a little low. Taste, and season your salad accordingly.

Citrus, Greens, and Burrata Salad Ingredients

  • mixed salad greens

  • 3 navel oranges

  • 2 balls of burrata cheese

  • 6 roasted carrots, oblique cut

  • 1/4 of a head of red cabbage, shredded

  • 3 Persian cucumbers, peeled, cut in half, and then 1/2” cubes

  • 6 Tablespoons extra virgin olive oil for dressing + 1 Tablespoon for roasting carrots

  • juice of one lemon

  • 1 Tablespoon of honey for dressing + 1 teaspoon for roasting carrots

  • kosher salt, to taste

  • black fresh ground pepper, to taste

Citrus, Greens, and Burrata Salad Instructions

  • preheat oven to 375

  • peel and cut carrots into oblique or 1 1/2” logs

  • in a medium mixing bowl toss carrots with 1 Tablespoon of olive oil, salt and pepper, and 1 teaspoon of honey

  • place dressed carrots on baking sheet and place in oven. Roast for approximately 15 minutes. They should be a little crunchy to add texture to the salad. Set aside and allow carrots to cool.

  • clean, wash and spin the mixed greens. place in large mixing bowl.

  • remove ends of oranges with a knife. peel and cut into 1/2” half circles. add to salad greens

  • add cabbage, cucumbers, and cooled carrots.

  • add olive oil, honey, salt, pepper, and lemon juice into the salad. toss well.

  • place salad on serving dish. break up burrata cheese over the top.

  • serve and enjoy!
