The weekend has finally arrived! If you're like me you love the weekends because they give you that little extra time to cook something special and entertain.  Today I'm sharing with you one of my favorite dishes, pan roasted chicken.  This dish takes care and attention but it's relatively simple and once you add in the herbs it'll fill your kitchen with the best smells. 

I like to start the process using a whole chicken so I'm sharing with you two instructional videos.  The first takes you through the process of breaking down a whole chicken. Someone asked me what I do with the bones once the chicken is prepped for roasting.  This is a great question.  What I do and encourage others to do is I save the bones and put them in a zip lock bag in the freezer. When you have enough you can use them to make chicken stock or for sauces.  It's a great tip to and will add an element of freshness to your chicken stock that you don't get from store bought.  I try not to waste in general and especially when using meat, I think it's important to use every part and to not be wasteful.  

The second video includes the ingredients and instructions on cooking pan roasted chicken.  My method

  • half chicken

  • salt to taste

  • high temperature oil (cannola of vegetable oil)

  • 1 clove smashed garlic

  • Herbs (thyme, rosemary)
