EATS: Sweet + Spicy Roasted Pumpkin Seeds Recipe

There are two major reasons I really like to make these sweet and spicy roasted pumpkin seeds and why I wanted to share with you all.  First of all, pumpkin seeds are a superfood. They're rich in protein, healthy fats--including omega-3—magnesium, zinc, iron and so much more! Read more about the health benefits here.  Secondly, when prepared correctly, they taste really amazing. So you can have a salty, crunchy snack to munch on without the guilt of cracking open a bag of potato chips.  Give this recipe a try and let me know your thoughts.  The ingredients are listed below and a video with super simple instructions is included. 

SWEET AND SPICY ROASTED PUMPKIN SEEDS

  • 2 Cups of pumpkin seeds (washed and rinsed)

  • 1/8 Teaspoon Cayenne Pepper (substitute with nutmeg for sweet roasted pumpkin
    seeds)

  • 1/2 Teaspoon fine sea salt

  • 1 Tablespoon Olive Oil

  • 1 Tablespoon of Honey
