Makes 4 Servings
Szechuan Tofu Ingredients
1 18 ounce pack Firm Organic Tofu, drained and cut into cubes
2 carrots, peeled and diced
1/2 cup shelled peanuts
1 bunch of scallion, chopped, whites separated from greens
1 Tablespoon fresh grated Ginger
4 cloves of Garlic, minced
2 Tablespoons sesame oil
1 teaspoon of Szechuan peppercorns, ground
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/8 teaspoon white pepper
2 Tablespoons chili black bean sauce
2 Tablespoon light brown sugar
2 teaspoons Black Vinegar
2 Tablespoons Soy Sauce
2 Tablespoons Corn Starch dissolved in 1 Tablespoon of water
1 cup of water
1 Tablespoon avocado oil
Szechuan Tofu Instructions
Place a large cast iron skillet over high heat and add avocado oil
sauté the carrots, whites of the scallion and peanuts
add tofu and sauté until slightly brown
add ginger, garlic, white pepper, sesame oil, Szechuan peppercorns, salt and pepper. sauté until fragrant and the garlic cooks out
add black bean sauce and sugar, heat through
add water, soy sauce, vinegar, stir into the mix and bring to a boil
add corn starch and mix into the ingredients until it thickens.
Serve over white rice, garnish with green scallion and enjoy!
