Makes 4 Servings

Szechuan Tofu Ingredients

  • 1 18 ounce pack Firm Organic Tofu, drained and cut into cubes

  • 2 carrots, peeled and diced

  • 1/2 cup shelled peanuts

  • 1 bunch of scallion, chopped, whites separated from greens

  • 1 Tablespoon fresh grated Ginger

  • 4 cloves of Garlic, minced

  • 2 Tablespoons sesame oil

  • 1 teaspoon of Szechuan peppercorns, ground

  • 1 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 1/8 teaspoon white pepper

  • 2 Tablespoons chili black bean sauce

  • 2 Tablespoon light brown sugar

  • 2 teaspoons Black Vinegar

  • 2 Tablespoons Soy Sauce

  • 2 Tablespoons Corn Starch dissolved in 1 Tablespoon of water

  • 1 cup of water

  • 1 Tablespoon avocado oil

Szechuan Tofu Instructions

  • Place a large cast iron skillet over high heat and add avocado oil

  • sauté the carrots, whites of the scallion and peanuts

  • add tofu and sauté until slightly brown

  • add ginger, garlic, white pepper, sesame oil, Szechuan peppercorns, salt and pepper. sauté until fragrant and the garlic cooks out

  • add black bean sauce and sugar, heat through

  • add water, soy sauce, vinegar, stir into the mix and bring to a boil

  • add corn starch and mix into the ingredients until it thickens.

  • Serve over white rice, garnish with green scallion and enjoy!
