Pan-Fried Lemon and Herb Skate

Say hello to summer with this delicious light and zesty dinner recipe, pan-fried lemon and herb skate. Ingredients Pan Fried Lemon and Herb Skate

  • 1 pound skate wing

  • 1/4 cup wondra flour

  • 2 Tablespoons avocado oil

  • 4 Tablespoons unsalted butter

  • 4-5 sprigs of thyme

  • juice of 1/2 lemon

Instructions Pan Fried Lemon and Herb Skate

  • preheat oven to 350 Fahrenheit

  • season each side of the fish with 1/2 teaspoon kosher salt and 1/4 teaspoon fresh ground black pepper

  • dredge the wing using wondra flour

  • place a cast iron pan over high heat and add avocado oil

  • once the oil is hot place skate wing into pan, cook each side until brown (approximately 2 minutes on each side)

  • add 3 Tablespoons of butter allowing it to brown and spoon/baste over the skate

  • add 4-5 sprigs of thyme branches

  • place cast iron with fish into the oven, allow to cook 2 minutes. Use spatula to to lift the meat from the cartilage, once it separates easily remove from oven

  • baste with 1 Tablespoon butter

  • add fresh squeezed juice of 1/2 lemon

  • remove fish meat from cartilage and plate. Top with flake salt and enjoy!
