Chickpea and Spinach Stew Ingredients
2 15.5 ounce cans of chickpeas, rinsed
2 14.5 ounce cans of organic diced tomatoes
4 ounces of fresh organic spinach (about 2 cups)
6 cloves of garlic, thinly sliced
1/4 cup olive oil
2 teaspoon kosher salt
1 teaspoon black cracked pepper
optional: 2 teaspoons red chili pepper flakes
4 or 5 sprigs of fresh thyme leaves, leaves removed from stem
Chickpea and Spinach Stew Instructions
place a large skillet over high heat and add the olive oil
when the oil is hot, add the garlic and cook until brown
next add in the thyme leaves and if you like a little spicy kick, the red pepper chili flakes
add tomatoes with juice to the mixture and season with salt and pepper. cook down for three minutes until some of the liquid reduces
add the chickpeas and cook an additional 2-3 minutes
finally, add the spinach and allow to cook down
taste and make any seasoning adjustments
serve! I enjoy this meal with rustic bread
