Oatmeal is a beloved breakfast staple, cherished for its simplicity, versatility, and comforting warmth. Yet, it doesn't always have to be the same old bowl every morning. Today, I'm excited to share my go-to recipe for "Citrus Berry Chia Oatmeal," a delightful twist on classic oatmeal that bursts with vibrant flavors and nourishing ingredients. This breakfast recipe combines the wholesome goodness of organic rolled oats with the tangy zest of fresh orange, the sweetness of honey, and the refreshing bite of mixed berries, making it a perfect start to your day.

What sets this oatmeal apart is the thoughtful blend of textures and tastes. The chia seeds add a nutritional boost and a slight crunch, while the pistachios offer a rich, nutty flavor that complements the bright, juicy berries. Citrus Berry Chia Oatmeal Ingredients (4 Servings)

  • 2 cups organic rolled oats (this is my go to)

  • 4 cups of water (add 1/2 cup of water more for a creamier oatmeal)

  • pinch of salt

  • 1/2 teaspoon cinnamon

  • 1 Tablespoon chia seeds

  • 1 orange, zested (you can substitute with 2 Tablespoons of orange juice)

  • 2 Tablespoons honey

  • 1 cup blueberries, washed

  • 1 cup raspberries, washed

  • 1/2 cup pistachios

Citrus Berry Chia Oatmeal Instructions

  • in a medium bowl mix oats, cinnamon, and chia seeds together

  • place a medium pot over medium high heat and add the water and a pinch of salt

  • add the oat mixture to the water and stir

  • bring to a boil

  • reduce heat to medium low and allow the oatmeal to cook until creamy (7-8 minutes)

  • remove from heat and mix in the honey

  • portion oatmeal into serving dishes and top with berries and pistachios. you may wish to top with another drizzle of honey and enjoy!

Oatmeal is a great source of soluble fiber, particularly beta-glucan, which helps reduce cholesterol levels, promotes healthy digestion, and can help manage blood sugar levels. The soluble fiber in oatmeal can help lower LDL (bad) cholesterol, which is beneficial for heart health. It also contains antioxidants called avenanthramides that have anti-inflammatory properties and can contribute to cardiovascular health. The beta-glucan in oatmeal forms a thick gel in the gut, which can slow down the absorption of glucose into the bloodstream. This helps prevent spikes in blood sugar levels.
