EATS: Berry Drop Biscuits with Lemon Glaze
Berry Drop Biscuits are one of our favorite baked goods to make at home—Jack’s most requested baked treat! Berry drop biscuits are also something we enjoy serving to our guests at brunch or as a nice morning treat for visitors who spend the night. These tender, buttery biscuits generously studded with vibrant berries gives each bite a burst of fruity sweetness. We top our berry drop biscuits with a lemon glaze adding another bright layer of flavor.
Berry Drop Biscuits Ingredients
1 1/2 cups ap flour
4 teaspoons baking powder
1/4 teaspoon salt
1/4 cup granulated sugar
6 Tablespoons of unsalted butter, cold and cut into cubes
4 Tablespoons of heavy cream, plus some more to brush over the tops
1/4 cup water
1/2 cup whole organic bluebberries
1/2 cup of sliced organic strawberries

1/4 cup confectioners sugar
1 Tablespoon fresh squeezed lemon juice
Berry Drop Biscuit Instructions
Preheat the oven to 425 °F
Line a tray sheet with parchment paper and set aside
In a medium mixing bowl, whisk together flour, sugar, salt and baking powder.
Using clean hands, add the butter and work it into the flour mixture until it becomes like a coarse meal
Add water, heavy cream and berries. Gently incorporate, try to avoid breaking any of the berries
The mixture should be shaggy. Scoop and form 6 biscuits on the tray sheet
brush the top of the biscuits with heavy cream
place in oven and bake for 15 minutes until the tops are a light brown
remove from oven and while cooling, make the lemon glaze
in a small mixing bowl mix lemon juice and confectioners sugar
spoon glaze over berry drop biscuits
