EATS: Egg White Frittata Recipe

Frittata is such a great dish to serve at brunch and I created this egg white frittata recipe for a heart healthier version. This frittata involves crispy potatoes, creamy feta cheese, and the snap of fresh green onions and red peppers. I’m fortunate that in Sag Harbor we’re still enjoying great weather so let’s head outdoors and create this dish!

Egg White Frittata Ingredients

  • 6 egg whites

  • 3/4 cup boiled and cut potatoes (I used red bliss but you can use Yukon or fingerling as well)

  • 1/4 cup diced red pepper

  • 2 green onions sliced into rounds, include white and green parts

  • 3 Tablespoons feta cheese

  • 2 1/2 Tablespoons Olive Oil

  • Salt and cracked Black Pepper to taste

Egg White Frittata Instructions

  • boil potatoes and cook until soft in the center. slice and set aside.

  • preheat oven to 350 degrees

  • crack and separate egg whites into a medium mixing bowl

  • add olive oil into a non-stick frying pan

  • over medium high heat add potatoes, salt and pepper. bring potatoes to a light crisp.

  • add red peppers, seasoning with salt and pepper as you go

  • add green onion and egg whites

  • cook mixing the egg whites into the mixture

  • add the feta cheese

  • place frittata into oven and bake on 3-5 minutes on each side (see video)

Tomato Salad Ingredients

  • 8 small Brunello tomatoes (or small red tomatoes) diced

  • 6 Basil leaves, chiffonade

  • 2 teaspoons Balsamic vinegar

  • 1 Tablespoon Olive Oil

  • salt and black cracked pepper to taste
