EATS: Fluffy Eggs Recipe
I’ve been playing with more heart healthy breakfast recipes and this fluffy eggs recipe is one of my favorites. A cross between an omelette and frittata, fluffy egg whites are really versatile because you place the toppings after cooking the eggs. That makes this a good recipe to serve buffet style. If you’re thinking about ideas for Easter brunch or other springtime gatherings, you could lay out a lot of options and let guests personalize their fluffy eggs. Here I used tomato and spinach for a topping but other great ideas include sautéed mushrooms, feta cheese, gruyere cheese, smoked salmon, olives, salsa, bacon bits, just let your imagination run wild.
Fluffy Eggs Ingredients
4 egg whites
Kosher Salt
1 teaspoon olive oil or avocado oil
2/3 tomato, diced
4 cups (packed) spinach fresh cracked black pepper
Fluffy Eggs Instructions
Preheat oven to 350 degrees Fahrenheit
In a clean medium bowl, separate four egg whites. Salt and using a hand mixer, beat the egg whites until white and fluffy.
In a small nonstick fry pan add olive oil and egg whites. Cook over medium high heat for about 1 minute
Place the eggs in the pan directly into the oven (be sure your pan is oven safe) and cook for 3-4 minutes. Pierce with a toothpick to be sure the center is cooked.
sauté the tomatoes and spinach and then add to the top. Finish with The Truffleist Truffle hot sauce
