EATS: One Pan Dinner

During a busy week, I find family dinner an important time to touch base with everyone and savor a tasty meal together and one pan dinners are the best because I spend less time cleaning up and more time with my family. This one pan salmon and herbed potatoes is a family favorite. Invest in buying quality local ingredients. The freshness and quality really come through and elevates your dish making family dinner feel like a really special part of the day.

One Pan Dinner Salmon and Herbed Potatoes Ingredients (4-6 servings)

  • 3 pounds fresh King Salmon

  • 6 Yukon gold potatoes, washed, boiled whole, and sliced

  • 2 large cloves of garlic, sliced

  • 3 Tablespoons parsley, chiffonade

  • 3 sprigs of thyme

  • 1 teaspoon hot honey

  • Salt and pepper to taste

  • 2 teaspoons fresh squeezed lemon juice

  • Olive oil

  • 3 radishes, sliced (optional)

One Pan Dinner Salmon and Herbed Potatoes Instructions

  • Season salmon with salt and pepper. Add 1 Tablespoon olive oil in a large skillet over high heat. Begin cooking salmon.

  • Add potatoes and season with salt and pepper. Drizzle a Tablespoon of olive oil over potatoes.

  • Place skillet in 375 degree oven. Allow to cook about 10 minutes (potatoes should brown).

  • Remove skillet from oven. Drizzle honey over the salmon. Lay garlic and herbs generously over potatoes and salmon.

  • Drizzle entire dish with lemon juice.

  • Serve and enjoy! You can top potatoes with some thinly sliced radishes for additional texture and freshness
