EATS: Soy Marinade Arctic Char

Soy Marinade Arctic Char Ingredients

  • 1 1/2 pounds Arctic char, deboned.

  • 1/4 cup mirin

  • 1/8 cup soy sauce

  • 1 Tablespoon Sambal

  • 1 Tablespoon light brown sugar

  • 1/4 cup cooking sake (cooking sake has salt so if using regular sake add salt to adjust taste)

  • 1 teaspoon Olive Oil

  • 1 green onion, chopped

  • Black and white sesame seeds

  • Salt

Soy Marinade Arctic Char Instructions

  • Slide a large sharp chef’s knife between the fish meat and skin to separate.

  • On a lightly oiled baking sheet, lay out the skin and salt each side. Place in oven on 375 and cook until crisp (around 8 minutes)

  • Cut the fish into 3 ounce pieces

  • In a medium mixing bowl, whisk together mirin, soy sauce, Sambal, light brown sugar and cooking sake.

  • Marinate Arctic char in sauce for 1-4 hours

  • Remove from marinade and place on a lightly oiled baking pan. Pour remaining sauce over the fish in baking pan

  • Cook on Broil setting in oven for approximately 5 minutes, keeping an eye on it to prevent burning.

  • Remove fish and check for desired done-ness.

  • Sprinkle with black and white sesame seeds

  • Chop one green onion and scatter over fish

To serve, cut your crisped skin pieces into strips that match your serving size pieces of Arctic char. Place the skin down on your serving plate and lay a serving of fish up top. Voila! You have a gorgeous presentation and a dinner recipe that’s a little bit sweet, savory, has a nice char to it, and great crunchy texture combined with perfectly tender fish.
