EATS: Spicy Steamed Arctic Char

Good morning! I hope you’re all starting this Sunday off well. Maybe your giving the whipped coffee cocktail a try for your brunch at home. For your Sunday dinner I wanted to share a special dinner recipe for spicy steamed arctic char. I learned this recipe for spicy steamed arctic char while I was Executive Sous Chef at Spago Beverly Hills. This is one of my favorite fish dishes and a favorite dinner recipe of my wife’s as well. It’s great with arctic char but you can substitute for any other fish (for something like tuna, you might sear and slice and then add topping/sauce rather than steam)—especially in these times when we’re all trying to use what we have on hand.

When I last prepared spicy arctic char I served with baby bok choy and rice. The sauce for this recipe is Asian inspired using sesame oil, soy sauce, and ginger, so anything in that tradition will pair well with it. Other side dishes that could compliment this dinner recipe well include mashed cauliflower, and broccolini. Get creative using what you have on hand and let me know how you served up the spicy steamed arctic char.

Spicy Steamed Arctic Char Ingredients

  • 6  pieces of 3 ounce arctic char

  • 1 large piece of ginger, peeled and julienned

  • 1 jalapeño, sliced

  • 3 cloves of garlic, chopped

  • 1 Tablespoon sesame oil

  • 3 Tablespoons avocado oil

  • 1 Tablespoon fresh lemon juice

  • Tablespoon soy sauce

  • 1/2 cup green onion (greens only), julienned

  • 1/4 cup cilantro, chopped

  • black pepper to season the fish

Spicy Steamed Instructions

  • season the fish with salt and black pepper. Steam for 6-8 minutes, until completely cooked.

  • In a sauté pan heat up both avocado and sesame oil over medium high heat. Once oil is hot, add ginger and start stirring with rubber spatula. Keep moving the ginger until it begins to brown and crisp up.

  • Lower heat to medium low. Add jalapeños and garlic making sure that the garlic doesn’t burn.

  • Add green onions and cilantro.

  • Turn of heat

  • Add lemon juice and soy sauce

  • Plate fish, add topping/sauce over the top. Serve with your favorite side dishes
