EATS: Vanilla Cupcake + Buttercream Frosting

Vanilla cupcakes with buttercream frosting is a classic recipe and one of my personal favorites. A few years ago, my sister was hosting a birthday party for her daughter and when I asked what I could bring she asked for cupcakes with sprinkles. Buttercream frosting is my favorite way to frost a cake or cupcake. It’s smooth and creamy so it not only tastes great but forms into shape nicely too. These vanilla cupcakes with buttercream frosting were a huge hit and quickly devoured by adult and toddler guests alike.

This upcoming weekend is Easter. Not only do these vanilla cupcakes with buttercream frosting taste great, they can be a fun hands on activity to involve kids or adults, whoever you are spending quarantine with. You could work on creating perfect rosettes from buttercream or have fun getting creative with toppings like sprinkles and candies, However you decide to do it, have fun. Buttercream Frosting

  • 1 cup of butter

  • 1.25 teaspoon salt

  • 2 teaspoons vanilla

  • 3 cups confectioner's sugar

  • 1.25 cup whole milk

Vanilla Cupcake Batter

  • 1 1/2 sticks of unsalted butter (12 tablespoons)

  • 1 and 1/2 cups of granulated sugar

  • 2 and 1/2 cups all purpose flower

  • 2 and 1/2 teaspoons baking powder

  • 1/2 teaspoon of salt

  • 1 cup and 1.25 cup of whole milk

  • 2 teaspoons vanilla extract

  • 2 eggs
