We love a good speakeasy and on our last visit to Seattle we were introduced to The Founders Club at the Fairmont Olympic Hotel. Following dinner at The George, we made our way down the main stair case and back to the hotel lobby. There, hidden behind the hustle and bustle of the lobby bar and a large bookcase is The Founders Club. This clandestine cocktail lounge offers a unique and intimate setting with soft leather sofas, plush red velvet arm chairs and ambient lighting. The ambiance of the Founders Club Speakeasy is designed to evoke the secretive and illicit atmosphere of the Prohibition era.

The cocktail menu at the Founders Club Speakeasy features a curated selection of classic and signature drinks, expertly crafted by skilled mixologists. Guests can savor expertly crafted cocktails made with premium spirits, fresh ingredients, and house-made syrups and infusions. I enjoyed the Quinta Punch. Served in a crystal-cut glass this cocktail features Mijenta Blanco Tequila, its vibrant essence mingling with the sweet notes of Plantation 3 Star Rum and the rich depth of Laubade Armagnac. It's a symphony of spirits, each one adding its own distinct character to the mix. The curated spice blend, adds a touch of warmth and complexity to the palate. Pineapple and citrus play their part, lending a bright and refreshing twist to the ensemble. Clarified milk lends a velvety smoothness to the drink. Between champagne and cocktails Lynette decided to try a virgin drink from the Founders Club menu and settled on the Tea County. Made of Lot 35 Jasmine Gold Dragon Tea infused with Orange Oleo Saccharum and Lime, this was a light and tasty drink to sip with floral notes and subtle sweetness, each sip a testament to the artistry of the tea maker.
