12 ounces spaghetti or linguine
1/4 cup olive oil
4 cloves garlic, minced
1 cup heavy cream
Zest and juice of 2 large lemons
1/2 cup grated Parmesan cheese
Salt and freshly ground black pepper, to taste
1/4 cup chopped fresh parsley
Extra lemon zest and Parmesan cheese for garnish
Creamy Lemon Pasta Instructions
Cook the Pasta: bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.
Prepare the lemon sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté until fragrant, about 1 minute.
Add the heavy cream, lemon zest, and lemon juice to the skillet. Stir to combine and let it simmer for 2-3 minutes to thicken slightly.
