We’re in the height of the summer season and I’m loving featuring seasonal fruits in our main dishes. This Stone Fruit Burrata Salad with Balsamic Honey Dressing is the perfect light summer meal or starter. This dish combines the juicy sweetness of ripe stone fruits with the creamy indulgence of burrata cheese, all brought together by a tangy and subtly sweet balsamic honey dressing. The fresh cracked black pepper adds a subtle, spicy kick that beautifully enhances the natural sweetness of the cherries, creating an exceptional combination that tantalizes the taste buds. Balsamic Honey Dressing Ingredients
1 Tablespoon whole grain mustard
1/2 teaspoon kosher salt
1/2 teaspoon black cracked pepper
2 Tablespoons honey
2 Tablespoons sherry vinegar
1/4 cup balsamic vinegar
1/2 cup avocado oil
2 Tablespoons extra virgin olive oil

set aside avocado and olive oils. combine all other ingredients by whisking together in a bowl
slowly whisk in the avocado oil in a slow and steady stream in order to emulsify

3 nectarines, halve and remove the pit. cut each half into 3-4 slices
1/2 cup of cherries, halved and pitted
2 balls of burrata, cut in sixths
5 mint leaves, chiffonade
1/2 cup walnuts, lightly toasted
maldon flake salt to taste
fresh cracked black pepper to taste

arrange the nectarines, cherries, and burrata on a serving dish.
generously season with cracked black pepper
season with maldon flake salt
evenly pour the balsamic honey dressing over the top
evenly spread the mint leaves and walnut pieces over the top of the salad
