After a morning walk on the beach, we decided to stop by our favorite local farm stand, Serene Green. We were delighted to find a variety of plums in peak season. Their vibrant colors and sweet aroma inspired us to create a dish that would truly celebrate this seasonal fruit. This Arugula Plum Salad with Pistachios, a light yet flavorful dish that perfectly highlights the freshness of the plums.

The salad itself is simple but full of contrasting textures and tastes. The peppery arugula provides a nice bite, while the juicy plums add a burst of sweetness, and the creamy burrata. The crunch of toasted pistachios ties everything together, making each bite interesting and satisfying. To top it off, we whipped up a quick Dijon dressing that adds a tangy, slightly sharp note to the salad, balancing the sweetness of the plums. It’s easy to make but really elevates the dish.

Arugula Plum Salad with Pistachios Ingredients (4 servings)

  • 2-3 plums. Pitted and cut into quarters. We suggest selecting different varieties of plums for color and layered flavors

  • 2 cups arugula

  • 2 balls of burrata cheese, cut into quarters

  • 1/4 cup pistachios, chopped

Dijon Dressing Ingredients

  • 1 Tablespoon Dijon

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup red wine vinegar

  • 1/2 teaspoon agave

  • 1/2 cup avocado oil

  • 1/8 cup extra virgin olive oil

  • 1/2 teaspoon fresh thyme, chopped

  • 1 small minced shallot

Dijon Dressing Instruction

  • Add dijon, salt, pepper, red wine vinegar, agave, and thyme into a tall deli cup.

  • mix using an immersion blender

  • next, slowly add in the avocado oil to form an emulsified dressing. Add olive oil and mix just until combined.

  • stir in shallots.

  • ready to use over salad
