One of my favorite parts about summer in the Hamptons is enjoying fresh fish. My son went on a fishing excursion off the coast of Montauk and brought home some beautiful cuts of yellowfin tuna. With tuna of this quality, I always insist on preparing is raw/sashimi style. This recipe for fresh tuna on crispy rice is so simple and allows for the tuna to remain the star while adding a few ingredients for layers of texture to the bring out it’s natural fresh flavor.

Fresh Tuna on Crispy Rice Ingredients
1/2 pound fresh tuna, large dice
1 small cucumber, diced
1/2 avocado, diced
2 teaspoons fresh chives, diced
1 Tablespoon soy sauce
1/4 teaspoon kosher salt
1 teaspoon sesame oil
1 teaspoon rice wine vinegar
2 teaspoons mirin
1-2 cups of rice (molded into small rounds and fried until crispy or cooked rice and simply add the tuna mixture over)
Fresh Tuna on Crispy Rice Instructions
In a medium mixing bowl combine all ingredients except for the rice and toss
Spoon the fresh tuna mixture over crispy rice rounds or over a bowl of cooked rice
