Chinese New Year Recipes: Singapore Noodles
I love creating a delicious and festive menu for Chinese New Year and so I wanted to share a couple of my favorite Chinese New Year recipes with you. I’ll begin with my recipe for Singapore Noodles. This dish is aromatic with curry and garlic and has a warm nutty taste from the sesame oil.
Below are the ingredients and video instructional. I lost the footage of the last scene so if you’re following along the last steps are really simple. You just incorporate the sugar, sesame oil, and green onions into the mixture. Give it a toss and remove from the heat. You don’t want the green onions to be more raw/fresh than cooked. This recipe is meant to feed a lot of people 8-10 servings so if you want to create a 4-6 serving size just cut the measurements in half.

Singapore Noodles Ingredients
8 ounces dried vermicelli noodles
3 eggs, beaten and seasoned with 1/2 teaspoon of salt
3 Tablespoons high heat oil ( 1 cook the eggs, + 1 to cook vegetables, + 1 to cook shrimp
1 pound of shrimp cleaned and deveined, tossed with 1 teaspoon of salt
1 red bell pepper, julienned
2 large carrots, peeled and julienned
1/2 white or yellow onion, julienned
3 cups cabbage (savoy or Napa) julienned
2 cloves garlic, minced
salt to season vegetables as you go
4 teaspoon curry powder
2 Tablespoon Shaoxing wine
3 teaspoons soy sauce
1/2 teaspoon sugar
1 teaspoon sesame oil
3 green onions, julienned
