EATS: Super Bowl Sunday Ultimate Layer Dip
Every Super Bowl party needs some variation of nachos or the Tex Mex seven layer dip. My Super Bowl Sunday Ultimate Layer dip combines some of my favorite recipes to create one delicious and easy to serve party favorite. Below I’ve included the ingredients and instructions for each layer. After you’ve completed the preparation, all you have to do is layer each part into a large casserole dish or serving bowl. Proceed with the layers as follows:
Spicy Beans
Queso
Greek Yogurt of Sour Cream (this requires no prep. I like to use a 2% fat Greek yogurt because it’s zesty)
Pico de Gallo
Guacamole
Serve with your favorite tortilla chips
Spicy Bean Layer Ingredients
15 ounce can black beans (or you can substitute for whatever bean preference you have)
1/2 yellow onion, diced
2 cloves garlic, minced
1 jalapeno, chopped
1 Tablespoon avocado oil (or other high heat oil)
1 1/2 teaspoon kosher salt
1/2 teaspoon cumin
1/2 teaspoon coriander
3 cups of water
Bean Layer Instruction
Add oil, onion and jalapeno to large sauce pot. Cook over medium high heat until lightly caramelized.
Add garlic, coriander, and cumin. Cook until aromatic (about 1/2 minute).
Drain and rinse the beans.
Add beans, salt, and water to pot. Bring to a boil and then reduce to simmer. Allow to cook 12-15 minutes until most of the liquid is evaporated and the beans are soft.
Remove from heat and set aside.
Pico de Gallo Layer Ingredients
1/4 cup white onion, finely chopped (see photo below)
1/4 cup fresh cilantro, chopped
1.25 teaspoons kosher salt
1 1/2 limes, juiced
1 jalapeño, diced (I keep the seeds and use them in my pico de gallo. If you want it a little less spicy then you should remove the seeds from the jalapeño)
4 cups diced tomatoes (approximately 2 1/2 large tomatoes)
Pico de Gallo Layer Instructions
After you have your limes juiced, your cilantro, tomatoes, jalapeño, and onion diced, just combine all ingredients in a medium mixing bowl.
Refrigerate if you do not serve immediately.
Spicy Guacamole Layer Ingredients
2 Avocados
1 jalapeño, diced
4 Tablespoons yellow onion, thinly diced
4 Tablespoons cilantro, chopped
2 limes, juiced
1 teaspoon Kosher salt
Spicy Guacamole Instructions
Halve the avocados and carefully remove the pit. Scoop the insides into a small mixing bowl.
Add cilantro, onions, jalapeño, lime juice and salt to the bowl.
Using a whisk or fork break the avocado down while combining all the ingredients
Queso Layer Recipe
1 Pound of Fresh Grated Cheese (I used a mix of yellow cheddar
and jack cheese)2 Tablespoons of Butter
1 Garlic Clove, minced
1 Can Evaporated Milk (12 fl ounces)
1/2 Cup of Milk
1/4 Teaspoon of Salt
2 Tablespoons of Cornstarch
1 Teaspoon of Lemon or Lime Juice
Queso Dip Instructions
In a large sauce pan melt the butter over medium high heat. Add garlic and sweat for one minute. Add evaporated milk and milk, and salt. Bring to a low boil. Reduce to a low simmer. Add cheese in thirds while blending with an immersion blender or stirring with a whisk. After the final addition of cheese, turn off the heat and stir making sure no cheese has burned on the bottom. Add lemon or lime juice.
