EATS: Sweet Potato Shakshuka

One of my most requested brunch items is Shakshuka. I enjoy making and eating this dish and a few nights ago I was creating dinner based on what I had on hand and wanting to satisfy my craving for Shakshuka while using what I had on hand I decided to put a twist on the classic Shakshuka and create a sweet potato Shakshuka recipe. The sweet potatoes give a hearty and slightly sweet touch that takes this dish to a whole new level. Imagine perfectly cooked eggs nestled in a rich and savory sweet potato stew, infused with aromatic spices like cumin, cayenne pepper and fresh thyme. It's the ultimate comfort food meets exotic flavors, and trust me, you won't be able to get enough of it. This is a great vegetarian recipe that everyone will enjoy. Here's how to whip up this delicious recipe.

Sweet Potato Shakshuka Ingredients

  • 1/8 cup olive oil

  • 1 and 1/2 cups chopped leeks

  • 1 sweet potato, cubed and roasted with a little olive oil, salt, and pepper

  • 3 cloves of garlic, sliced

  • 2 Tablespoons tomato paste

  • 1 can (14.5 ounces) organic diced tomatoes with the juice

  • 1/2 teaspoon cumin

  • 1/8 teaspoon cayenne pepper

  • 1 teaspoon fresh thyme

  • salt and pepper to taste

  • 4 eggs

  • 4 thick pieces of Italian bread

  • chopped chives for garnish

Sweet Potato Shakshuka Instructions

  • In a large sauce pan add olive oil and heat over medium high heat

  • note: salt and pepper to taste as you add ingredients to the pan. Season a little at a time and make final adjustment at the end.

  • add leeks into pan and saute until soft

  • next add in garlic, cook until light brown

  • add the cumin, cayenne, thyme

  • next, add tomato paste to the pan and cook out for about 30 seconds

  • add the sweet potatoes and incorporate with all ingredients

  • add diced tomatoes, and cook to a simmer until the tomato is a slightly thick consistency (about 5 minutes)

  • using a rubber spatula make four divets in the sauce and crack eggs into the pocket.

  • lid and lower heat and allow eggs to cook to preference

  • remove from heat garnish with fresh chives

  • serve with bread on the side for dipping
