Potato Salad Ingredients (4-6 servings)

  • 24 ounce Honey gold bite size potatoes, washed

  • 2 Tablespoons Kosher salt + more for seasoning

  • 2 Tablespoons white wine vinegar

  • 3 ribs diced celery

  • 1/2 yellow onion, diced

  • 1/4 cup pickled jalapeños, drained chopped

  • 1/4 cup chopped fresh dill

  • 2/3 cup good mayonnaise, such as Hellmann’s or Best

  • 1/3 cup Greek yogurt

  • freshly ground black pepper

  • 3 hard-boiled eggs, diced

Potato Salad Instrucitons

  • Place a large sauce pan over medium high heat. Add the washed potatoes and pour enough water into the sauce pan to fully cover the potatoes. Add 2 tablespoons salt. Bring to a boil and allow to cook until tender.

  • Once the potatoes have cooked set aside ⅓ cup of the cooking liquid into a medium bowl and add the vinegar.

  • Drain the potatoes and allow to cool. Once cooled cut into quarter pieces leaving the skin on.

  • Add the potatoes to the water and vinegar mixture and toss. Taste and salt. Cover and place in the refrigerator to fully cool.

  • In a medium bowl, combine the celery, onions, jalapeños, and dill. Season with salt and pepper.

  • In another medium bowl, whisk together the mayonnaise, yogurt, 1 teaspoon kosher salt, and ½ teaspoon black pepper.

  • Add the vegetable/herb mix into the dressing until fully combined. Cover and place in the refrigerator while the potatoes fully cool.

  • In a large bowl, combine the potatoes with the dressing and vegetables. Add the eggs last and toss into the salad.

  • Serve and enjoy!
