EATS: Breakfast Potatoes

Today my middle son, Ace, is officially a teenager! It’s his 13th birthday. One of Ace’s goals is to be an Executive Chef. You can see in the photo below, it’s a passion we nurture. To pay tribute to Ace on his birthday and his goals, I decided to share this recipe for breakfast potatoes. Not only are breakfast potatoes a family favorite, a couple of years ago, Ace and Jack (my youngest son) created a video with me on how to make this recipe. We filmed this two years ago. They grow so fast!

Crisp on the outside and tender on the inside, with just the right blend of simple spices, breakfast potatoes are delicious and the ultimate staple brunch recipe. Breakfast potatoes compliment anything from truffle eggs, to frittata, to cutting the sweetness of fluffy pancakes or french toast.

This recipe for breakfast potatoes serves a large crowd, 8-10 people. That’s because when we made the video for breakfast potatoes they were being served to my four kids (who have very healthy appetites), Lynette, myself, and my sister-in-law and her husband. When we’re all together it’s always a happy crowd. Just cut the recipe in half if you’re feeding a smaller crew.

Breakfast Potatoes Ingredients

(serves 8-10)

  • 1 and 1/2 onions, chopped

  • 5 cloves of garlic, minced

  • 8 medium potatoes (yukon gold)

  • 2 cups small red peppers, sliced

  • Kosher Salt to taste

  • Pepper to taste

  • 3 Tablespoons Olive Oil

  • 2 teaspoons Paprika

Breakfast Potatoes Instructions

  • Place potatoes in salted boiling water with a smashed clove of garlic. Lower to a simmer and allow potatoes to cook until tender.

  • Drain potatoes well and cut into large cubes

  • Place a large sauté pan over medium high heat. Add oil.

  • When oil is hot place potatoes into the sauté pan. Cook until crisp and brown on one side. Salt potatoes.

  • Next, add onions and allow to cook on high heat.

  • Add paprika; salt and pepper as you go.

  • After the onions have cooked for about two minutes add the peppers

  • Allow all ingredients to cook together for 2-5 minutes

  • plate and serve (with your favorite hot sauces and salsas if you prefer)
