Chickpea Salad with Lime Jalapeño Vinaigrette

A fresh and vibrant dressing really elevates any salad, and this Lime Jalapeño Vinaigrette is the perfect choice. With its zesty lime juice, a touch of heat from jalapeños, and the smooth richness of avocado oil, this vinaigrette adds a delicious twist to any salad. Pair it with a simple yet flavorful Chickpea Salad for a satisfying and healthy meal. Here’s how to make it:

Lime Jalapeño Vinaigrette Ingredients (dress the salad with 1/3 of what this dressing recipe yields)

  • 1/2 cup avocado oil

  • 1/4 cup fresh lime juice (about 2 limes)

  • 2 tablespoons apple cider vinegar

  • 1-2 jalapeños, seeded and finely chopped (adjust to taste for heat)

  • 1 garlic clove, minced

  • 1 teaspoon agave nectar (for a touch of sweetness)

  • 1 tablespoon Dijon mustard

  • 1/2 teaspoon ground cumin

  • Salt and pepper to taste

Lime Jalapeño Vinaigrette Instructions:

  • Combine Ingredients: In a bowl or jar, use an immersion blender to combine the lime juice, apple cider vinegar, Dijon mustard, and maple syrup.

  • Add Oil and Flavorings: Slowly whisk in the avocado oil until well combined. Stir in the finely chopped jalapeños, minced garlic, and ground cumin.

  • Season: Taste and season with salt and pepper to your preference.

  • Chill: Refrigerate for at least 30 minutes to let the flavors meld together.

Chickpea Salad Ingredients (4-6 servings)

  • 2 cups of cooked chickpeas

  • 1 cup red peppers, diced

  • 1 cup cucumber, diced

  • 1 avocado, peeled and cubed

  • salt and pepper to taste

Chickpea Salad Instruction

  • Add ingredients to a large mixing bowl. Season with salt and pepper and toss.

  • Pour about 1/3 of the Lime Jalapeño Vinaigrette to the salad and toss

  • serve and enjoy!
