EATS: Crab Fries Recipe

I developed this recipe for crab fries while I was CenturyLink Field Executive Chef in Seattle. When creating a menu that would appeal to Seahawks and Sounders fans, I wanted to include some items that celebrated great local ingredients. One thing we have a lot of in the Pacific Northwest is Dungeness crab. I had seen crab fries on other stadium menus but wasn’t committed to any of the recipes that I found. I decided to create my own crab fries recipe and that’s how we got to this delicious, cheesy, creamy, herby dish. It’s a game day snack favorite.

My CenturyLink co-worker (in HR), Christine asked me for this recipe a few days ago. Shout out to Christine for reminding me of these crab fries and now I can share it with you all.

As I’ve mentioned, I am on the East Coast now, so when I recreated my crab fries I used crab that is local to this region. Peekytoe is my first choice of crab variety when cooking on the east coast or you could use rock crab as well. Both work great for crab fries. Wherever you’re cooking from, I would go with the freshest variety of whatever crab is near you. If you’re landlocked, just go with your favorite crab. Including a couple of throwback photos from 2015 as CenturyLink Stadium Executive Chef from an event where we revealed some of our coach and Seahawks players themed foods and the new crab fries. If you recall I made this recipe with waffle fries at the stadium. I’ve evolved to using traditional French fries but you can use whichever you prefer. Just make sure you get a nice crisp to your fries so that they can withstand the weight and cream of the crab sauce.

Crab Fries Recipe

(2-4 servings)

  • 1/3 cup heavy cream

  • 3/4 pound of fries

  • 2.5 ounces of boursin garlic and fine hebs gournay cheese

  • 6 ounces of crab meat

  • 1 Tablespoon butter

  • 2 ounces cream cheese

  • 1 Tablespoon parm

  • 1 clove garlic, minced

  • 1/4 teaspoon paprika

  • 1/4 teaspoon black pepper

  • 1 Tablespoon parsley, fresh chopped

  • 2 lemon wedges

Crab Fries Instructions

  • Begin with frozen fries and cook on medium high heat in a non-stick pan until golden brown on all sides. Set aside.

  • In a large sauté pan, melt butter

  • Add minced garlic to pan. Cook until garlic is toasted

  • Next, add the cream cheese and heavy cream, cook together until cream cheese is melted

  • Add boursin and the juice of one lemon. Add paprika and black pepper. Mix ingredients together.

  • Last, add in crab meat, parsley, and half of your parmesan cheese combining with all other ingredients

  • With the remaining parmesan cheese dust the French fries and then top with the crab mix

  • Serve and enjoy!
