Cucumbers are trending and we happened to have 5 large cucumbers sitting in our refrigerator and a nice salmon so—admittedly inspired by the trend— the dinner plan quickly became creamy cucumber dill salad and pan fried salmon. We love the taste and simplicity of how the creamy cucumber dill salad turned out so we decided we had to share the recipe with you! Creamy Cucumber Dill Salad with Feta Cheese is a light, refreshing dish that’s perfect for the summer. The crisp cucumbers are complemented by a tangy, yogurt-based dressing infused with fresh dill and garlic, while crumbled feta adds a savory touch. It’s an easy, flavorful side dish that pairs well with grilled meats, fish, or a simple lunch. Here's a delicious recipe for a Creamy Cucumber Dill Salad with Feta Cheese:

Creamy Cucumber Dill Salad Ingredients:

  • 1 large cucumber, thinly sliced

  • 4 cloves of garlic, minced

  • 1/2 cup crumbled feta cheese

  • 1/4 cup fresh dill, chopped

  • 1/2 cup Greek yogurt

  • juice of 1/2 lemon

  • Salt and freshly ground black pepper, to taste

Creamy Cucumber Dill Salad Instructions:

  • Begin by preparing your cucumbers. Slice the cucumbers thinly, then place them in a large mixing bowl. Salt and pepper to taste and allow the cucumbers to absorb the seasoning while preparing the salad dressing.

  • In a medium bowl, whisk together the Greek yogurt, lemon juice, minced garlic, half of your feta cheese crumbles, and dill. Season with salt and pepper to taste.

  • Add cucumbers to the mixture and toss until the cucumber slices are evenly dressed.

  • Chill. Cover the cucumber salad and let sit in the refrigerator for at least 20 minutes to let the flavors meld.

  • Serve chilled, garnished with the remaining feta and finishing salt and cracked black pepper.
